I saw in this trailer from NFS Rivals the Lamborghini Gallardo LP560-4 2013 racer:
Pause at 0:20 and 0:25
But this car isn't in the full version of the game, it only appears as a cop. Any explanations?

I don't know where you see a Lambo, they only show the Ferrari there.

well I think they just scrapped it because Gallardo LP570-4 is in the game, it doesn't really need 2 almost exact same cars
also the racers have Gallardo LP570-4 and Aventador LP 720-4 while cops have LP560-4 and LP700-4
