The title says it all!
1. Mystery City
A city to the west of Palmont. Situated on the side of a mountain west to the West Canyon. Visible from Lookout Point as well as north of Fortuna. It is assumed to be the beta version of Palmont. The map used in the demo version of Carbon is the map of Mystery City.
2. San Juan's Location
San Juan is situated east of East Canyon, and not west of Fortuna as according to the OOL map. It was supposed to be much larger and a full district, but it got dropped in the final game due to unknown reasons.
3. Unknown Canyon Track
A canyon track seen in an advertisement for Carbon. The landscape visible from it resembles the landscape around San Juan, hence the canyon track is assumed to be situated in the mountains near San Juan.
4. Islands to the South
There are 4 islands towards the south of Palmont, 2 of which are inhabited. No information is known about these 4 islands.
5. South Canyon
A Canyon to the south of Palmont. Visible from some canyon tracks as well as some screenshots. However, it is not indicated in the in-game map.
6. True Canyon Track Locations
The location of canyon tracks are incorrectly indicated in the in-game map. Correct locations are -
Carbon Canyon: Desperation Ridge, Journeyman's Bane, Deadfall Junction
East Canyon: Eternity Pass, Gold Valley Run, Copper Ridge, Knife's Edge, Devil's Creek Pass
West Canyon: Lofty Heights Downhill, Lookout Point(west side of West Canyon)
7. Unknown City 1
A city to the east of Palmont, situated east of East Canyon, like San Juan. It is near San Juan and separated from it by a mountain.
8. Unknown City 2
Seen in the box art for both normal and Collector's Edition Carbon. No information is known about this city.
9. Unknown City 3
A city to the west of Palmont, situated in the upper part of West Canyon. Visible from Desperation Ridge.
10. Unknown City 4
A city to the west of Palmont, situated on the west side of West Canyon. Visible from Deadfall Junction.
11. Secret Lake
A lake to the north of Silverton. It is visible from some canyon tracks, but it is not indicated in the in-game map.
12. Santefe City
The name of the far away texture seen from San Juan according to TexEd. Also hinted in the game's executable file as "santafe". It's used to represent Silverton as seen from San Juan.
13. LeSamurai
A deleted crew, whose crew vinyl is still leftover in the game. The crew logo can be seen as graffiti in Palmont and San Juan, except Downtown Palmont.
14. Miscellaneous
a. Kenji was the boss of San Juan.
b. In some pre-release content, Kenji is shown driving a Ford Mustang GT.
c. Many crews were deleted, inferred from the missing crew backgrounds, as well as many cars seen in screenshots and videos.
d. Two cutscenes have been deleted in the final game.
e. The player's Supra was supposed to be in the pursuit with Cross, not the M3 GTR. Also, the Supra got busted, not totaled like the M3 GTR.
f. Downtown Palmont, Silverton, Kempton all were supposed to be larger.
g. There is an unknown airport somewhere to the east of Palmont, as aeroplanes can be seen leading to/from that direction in some screenshots.
h. Bridges can be seen passing overhead in some canyon tracks.
i. There are two types of road textures used in canyon tracks: One yellowish looking, similar to the beta roads and the other black, like the city roads in the final game.
j. Sal seems to be a member of a crew which operates in San Juan. The assumed boss of the crew drives a Golf R32.
k. Gold valley Run track structure closely resembles the east part of Jackson Heights.
